Lemony Lentil Salad




This is one of my favorite recipes so far this summer!  Lentils are a great source of iron, fiber and protein and I've been incorporating them into a lot of meals.  I buy the package of steamed lentils from Trader Joe's.  Good stuff :)

I originally found this recipe on EatingWell.com but I removed the olive oil, cheese and salt from the recipe.  This makes it soooo much healthier and allows the delicious flavors of the fresh lemon, dill and dijon to come through.  It's the perfect salad for a summer picnic or to bring to the office for lunch!
Ingredients
  • 1/3 cup fresh lemon juice
  • 1/3 cup fresh dill, chopped
  • 2 teaspoons Dijon mustard
  • Freshly ground pepper, to taste
  • 1 -17.6 oz package steamed lentils (about 3 cups cooked lentils)
  • 1 medium red bell pepper, seeded and diced (about 1 cup)
  • 1 cup seedless cucumber, diced
  • 1/2 cup red onion, finely chopped

Instructions
1. Whisk lemon juice, dill, mustard, and pepper in a large bowl. Add lentils, bell pepper, cucumber and onion; toss to coat.  Serves 6-8.
