Broccoli and Bell Pepper Stir-Fry (Chinese Take-out)


Well it has been quite a while since I've posted anything to this blog!  Rest assured, I have kept up with my vegan cooking, just not had as much time for blogging about it :)  I decided to revive it because my Mom was asking me for recommendations on recipes to try in the new cookbook I gave her.  So I'm reviving it for you Mom! 

This recipe for Broccoli and Bell Pepper Stir-Fry is on page 161 of Everyday Happy Herbivore.  I used orange peppers instead of red peppers because they were on sale at the time :)  The sauce is delicious and soaked in to the veggies just right!  Serve with brown rice or even rice noodles to extend the serving.  YUM!

Serves 2

Stir-Fry Ingredients


  • 2 cups water
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp nutritional yeast
  • 2 tbsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground ginger
  • 1 tsp Vegan Worcestershire Sauce (you can buy or recipe below!)
  • 1 head broccoli, chopped into florets
  • 1 tsp cornstarch
  • 1 bell pepper (red, yellow or orange), seeded and sliced
  • cooked brown rice, as desired

Stir-Fry Instructions


  1. In a small bowl, whisk water with low-sodium soy sauce, nutritional yeast, Dijon mustard, spices and Vegan Worcestershire Sauce.
  2. Pour half into a skillet and bring to a boil.
  3. Add broccoli and cook over high heat for a few minutes, until the broccoli turns bright green and the sauce has mostly cooked off.
  4. Whish cornstarch into remaining broth until well combined and then pour over broccoli.
  5. Add bell peppers and continue to cook over high heat until the broccoli is dark green, the bell peppers are tender but still crisp, and the sauce has reduced down but is not completely evaporated (you want a good bit of sauce).
  6. Spoon broccoli and bell pepper over cooked brown rice and drizzle with remaining sauce.


Vegan Worcestershire Sauce Ingredients


makes 1 cup

  • 6 tbsp apple cider vinegar
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar, or 1 tsp molasses
  • 2 tsp prepared mustard (any)
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp ground ginger
  • 1/8 tsp ground cinnamon
  • light dash of cayenne pepper or chili powder
  • light dash of allspice or ground cloves
  • salt (optional)

Vegan Worcestershire Sauce Instructions


  1. Whisk all ingredients together with 1/4 cup of water until well combined.
  2. Add salt if desired.
  3. Store in an airtight container in the fridge.
