This breakfast meal is super quick and without the egg and oil, it's healthy too! The recipe is on page 24 of the Happy Herbivore Cookbook but it's also posted online here. I like to top mine with frozen berries (thawed of course!). Trader Joe's Very Cherry Blend are the best because the mix has huge cherries in it. The fruit juice acts a syrup but a little pure maple syrup on top really makes this a treat!
Serves 4
Ingredients
- 6 whole whole wheat bread slices
- 1 cup plant-based milk
- ¼ cup chickpea flour
- 1 tsp cinnamon
- 1 tsp pure maple syrup
- ¼ tsp salt
- ¼ tsp nutmeg
- ⅛ tsp confectioners sugar (optional)
Instructions
- Cut bread diagonally and set aside.
- Heat non-stick griddle or flat pan.
- Whisk non-dairy milk with remaining ingredients in a shallow bowl.
- Quickly dip a few bread slices into wet mixture and cook for about 3 minutes on each side, repeating with leftover until no more bread is remaining.
- Garnish with powdered sugar and fresh fruit slices.
