I was looking for a recipe to go with my Spiced Sweet Potato & Kale Soup and thought these muffins looked perfect and fit the fall theme :) They have a slightly sweet flavor but with the spinach, have an added bonus of protein, fiber and nutrients! And of course at only 85 calories a muffin 0.5g fat a muffin, can't beat that! Another fast, easy and yummy one :)
Ingredients
- 2 cup spinach, fresh
- 1 banana
- 1 tbsp vanilla extract
- ¼ cup unsweetened almond milk
- 2 cups white whole wheat flour
- 1 tsp baking soda
- 1 lemon zest
- ¼ tsp baking powder
- ¼ cup Stevia in the raw
- 1 cup pineapple canned, diced or crushed (make sure you buy the one in water NOT syrup)
Instructions
- Preheat oven to 375 degrees.
- Combine pineapple (with juices), spinach, banana, vanilla extract, and milk in a blender or food processor until well combined -- makes a green goop.
- Mix remaining ingredients in a bowl . Then pour in spinach mixture, stirring to combine. If it looks dry, add another 2-4 tbsp milk (some pineapple is juicer than others).
- Spoon into a greased muffin pan and bake 15-20 minutes at 375F.
- Makes 12 muffins.
