Green Goblin Muffins


I was looking for a recipe to go with my Spiced Sweet Potato & Kale Soup and thought these muffins looked perfect and fit the fall theme :)  They have a slightly sweet flavor but with the spinach, have an added bonus of protein, fiber and nutrients!  And of course at only 85 calories a muffin 0.5g fat a muffin, can't beat that!  Another fast, easy and yummy one :)

Ingredients

  • 2 cup spinach, fresh
  • 1 banana
  • 1 tbsp vanilla extract
  • ¼ cup unsweetened almond milk
  • 2 cups white whole wheat flour
  • 1 tsp baking soda
  • 1 lemon zest
  • ¼ tsp baking powder
  • ¼ cup Stevia in the raw
  • 1 cup pineapple canned, diced or crushed (make sure you buy the one in water NOT syrup)

Instructions

  1. Preheat oven to 375 degrees.
  2. Combine pineapple (with juices), spinach, banana, vanilla extract, and milk in a blender or food processor until well combined -- makes a green goop.
  3. Mix remaining ingredients in a bowl . Then pour in spinach mixture, stirring to combine. If it looks dry, add another 2-4 tbsp milk (some pineapple is juicer than others). 
  4. Spoon into a greased muffin pan and bake 15-20 minutes at 375F.
  5. Makes 12 muffins.
