Another fall treat that goes perfectly with any meal! I used the Happy Herbivore recipe but had to add extra applesauce to the recipe because the mixture was very dry without it. The biscuits turned out delicious, with just a hint of sweetness. We ate them with soup and the leftovers for breakfast :-)
Ingredients
- 2 cups whole wheat flour (white)
- 1 whole red apple, diced
- 2 tsp baking powder
- pinch of salt
- 2/3 cup unsweetened applesauce
- 2 tsp Stevia
- 1 tsp cinnamon
Instructions
Makes 12 biscuits.- Preheat oven to 400F. Grease a cookie sheet and set aside.
- Core an apple and quarter. Add apple to a blender or food processor with a splash of water and pulverize into the consistency of applesauce, adding a touch more water if necessary.
- Add unsweetened applesauce to blended apple, mix together using blender or food processor and set aside.
- In a mixing bowl, whisk flour, baking powder, a pinch of salt, Stevia and cinnamon. (You can also add 1 tsp fresh rosemary, instead of the Stevia and cinnamon for a savory biscuit here).
- Add applesauce mixture to flour mixture 1/4 cup at a time until the batter is moist (wetter is better; you should use most of or all of the applesauce).
- Drop large spoonfuls on the cookie sheet and bake 10-13 minutes, or until firm to the touch and lightly golden on the bottom and edges.
